Notes From Underground
In this episode of Wisconsin Foodie we travel to Madison, WI to visit Forequarter Restaurant and Underground Butcher. The Underground Food Collective's Jonny Hunter tours us through both of their newest ventures. Forequarter is a restaurant that prides itself on inventive American cuisine utilizing ingredients and products sourced and made locally. We then visit Underground Butcher and get a behind the scenes look at the lost art of whole animal butchery while getting a lesson on everything from organic to non organic, sourcing local meats and butchering philosophy.

Piggy Goes To The Market
In this episode of Wisconsin Foodie we follow some very special pigs from the field to the restaurant and eventually a meat raffle. First we visit with Chef Karen Bell, Owner of Bavette Le Boucherie in Milwaukee, WI and get her philosophy on the old world style of new school butchery. We then follow Karen to Uplands Cheese in Dodgeville, WI to meet Cheesemaker Andy Hatch. Andy tours us through his facility and farm introducing us to his whey fed pigs. Finally we catch up with both Andy and Karen weeks later after the pigs are slaughtered for an event at Bavette that will celebrate Andy's pigs and cheese. Also special appearance by Chef Adam Siegel of the Bartolotta Group.

There the Wienke family gives us a tour of their farm and market, as well as a demo of their pickling process. In act two, we travel to Reedsburg, WI to visit the annual fermentation fest. Donna Neuwirth, Fermentation Fest organizer, takes us on the 50 mile loop tour of art and food that is Fermantation Fest.

Hooks Cheese
In this episode of Wisconsin Foodie we travel to Mineral Point WI to visit with one of Wisconsin's true cheesemaking treasures, Tony Hook of Hooks Cheese Company. Hook's is known for their variety of high quality specialty cheeses, with one of our favorites being the 15 year old aged cheddar. Host Kyle Cherek, meets with Tony for a tour of their cheesemaking facility and also gets a little insight on aging cheddars, making blue's and most importantly, the curd.

Skillet Grilled Cheese
In this episode of Wisconsin Foodie we feature the WI Grilled Cheese Championship as well as American Skillets by artist Alisa Toninato. Our first stop is to meet Lorin Toepper, creator of the WI Grilled Cheese Championship in Mineral Point. The states very best grilled cheese chefs compete to win the annual title of best grilled cheese in the state, taking home a trophy, bragging rights and a WI shaped cast iron pan. Then we travel to Madison to meet Alisa Toninato of FeLion Studios and get a first hand look at how she creates cast iron pans in the shape of WI.

In this weeks episode of Wisconsin Foodie we explore some of the less traditional aspects of Milwaukee's Beer and Sausage traditional past. In Act one we visit Glorious Malone's Fine Sausage and get a behind the scenes look at the process of making Headcheese with Daphne Jones. Then in Act two, we head to Cathedral Square in Milwaukee for the annual Firkin Beer Fest. There we get some insights into what a Firkin is as well as see what some of Wisconsin's up and coming brewing talent is brew up.

Rockabilly Chili
In this episode of Wisconsin Foodie we visit the annual WMSE Rockabilly Chili Fundraiser in Milwaukee, WI. WMSE is an independent collage radio station in Milwaukee and has always been on the cutting edge of good music and culture. Each year they hold a massive chili competition between local restaurants as a fundraiser. This year they have included a Milwaukee firehouses into the competition and that's where we start. We follow Fire Lieutenant Schuyler Belott as he prepares his special batch of chili for the competition and gives us some insight into Firehouse cuisine. We also follow 6 time Veggie chili winner Riverwest co-op as they prepare their Bloody Bean chili.

In this episode of Wisconsin Foodie we visit a classic Wisconsin institution and ultimate Wisconsin Foodie destination, the Ishnala Supper Club in Wisconsin Dells. There we meet up with the Ken Burns of Supper Clubs, author and filmmaker Ron Faiola. Ron gives us some history on Wisconsin Supper Clubs, we drink brandy Old Fashioned's and have the ultimate summer supper club feast. Then we travel to Praire Du Sac, WI with Ira Koplowitz of Bitterbube to visit Wollersheim Winery and talk to Winemaker Philippe Coquard about their recent venture into the world of distillation, specifically grape Brandy.

First we visit the Ditter family at their 4th generation dairy farm, Smilaire Family Farms in Plymouth, WI. We then follow a shipment of their milk to the Sartori Cheese company where they are making their award winning cheeses, SarVecchio Parmesan and Bellavitano. Host Kyle Cherek gets a tour of the process from Master Cheesemaker Mike Matucheski and also meets with Owner Jim Sartori.

We then follow the cherries back to the orchard where they grew up, Seaquist Orchard, and meet farmer and owner Dale Seaquist. Finally, we celebrate the cherry season in the heart of cherry country at the annual Door County Cherry Fest.

Cress Farm and Bakery
In this episode of Wisconsin Foodie we visit Blue Mounds WI for a Picnic on the Farm at Cress Spring Farm and Bakery. Hosted by Edible Madison, this picnic features hertiage raised pigs staight from cress spring farm and raised by Chef Dan Fox and Micah Nichols. Travelling only a couple yards from where the pigs are raised is a traditional wood fire oven used by baker Jeff Ford to bake incredible artisanal breads as well as the pigs for the even's feast.

In this episode of Wisconsin Foodie we turn the tables and travel to New York City & see first hand the influence Wisconsin has on the worlds biggest culinary stages. First we meet with Beloit native turned international celebrity and and michelin awarded chef, Michael White. Chef White tours us through his restaurant Morini. Next we vista a New York staple and go to for the best cheese in the world, Murray's Cheese. There we get some insight into where Wisconsin ranks amongst some of these fine cheeses. Last but not least we hang out with Milwaukee native Julia Jaksic, chef at Employees Only. Chef Julia creates midwestern inspired dishes to accompany their award winning cocktails.
