Cress Farm and Bakery
In this episode of Wisconsin Foodie we visit Blue Mounds WI for a Picnic on the Farm at Cress Spring Farm and Bakery. Hosted by Edible Madison, this picnic features hertiage raised pigs staight from cress spring farm and raised by Chef Dan Fox and Micah Nichols. Travelling only a couple yards from where the pigs are raised is a traditional wood fire oven used by baker Jeff Ford to bake incredible artisanal breads as well as the pigs for the even's feast.

In this episode of Wisconsin Foodie, we profile a young entrepreneurial couple that makes small batch preserves, Quince and Apple. They are dedicated to sourcing local and high quality ingredients for their preserves. We follow them through a batch of their newest recipe, Tart Cherry and White Tea. We then follow the cherries back to the orchard where they grew up, Seaquist Orchard, and meet farmer and owner Dale Seaquist. Finally, we celebrate the cherry season in the heart of cherry country at the annual Door County Cherry Fest.

Ditter Family Farm, Santori Wi
In this episode of Wisconsin Foodie we follow milk from a 4th generation dairy farm to a 4th generation cheese company. First we visit the Ditter family at their 4th generation dairy farm, Smilaire Family Farms in Plymouth, WI. We then follow a shipment of their milk to the Sartori Cheese company where they are making their award winning cheeses, SarVecchio Parmesan and Bellavitano. Host Kyle Cherek gets a tour of the process from Master Cheesemaker Mike Matucheski and also meets with Owner Jim Sartori.

The Underground Food Collective's Jonny Hunter tours us through both of their newest ventures. Forequarter is a restaurant that prides itself on inventive American cuisine utilizing ingredients and products sourced and made locally. We then visit Underground Butcher and get a behind the scenes look at the lost art of whole animal butchery while getting a lesson on everything from organic to non organic, sourcing local meats and butchering philosophy.

Piggy Goes To The Market
In this episode of Wisconsin Foodie we follow some very special pigs from the field to the restaurant and eventually a meat raffle. First we visit with Chef Karen Bell, Owner of Bavette Le Boucherie in Milwaukee, WI and get her philosophy on the old world style of new school butchery. We then follow Karen to Uplands Cheese in Dodgeville, WI to meet Cheesemaker Andy Hatch. Andy tours us through his facility and farm introducing us to his whey fed pigs. Finally we catch up with both Andy and Karen weeks later after the pigs are slaughtered for an event at Bavette that will celebrate Andy's pigs and cheese. Also special appearance by Chef Adam Siegel of the Bartolotta Group.

Donna Neuwirth, Fermentation Fest organizer, takes us on the 50 mile loop tour of art and food that is Fermantation Fest.

In this episode of Wisconsin Foodie we turn the tables and travel to New York City & see first hand the influence Wisconsin has on the worlds biggest culinary stages. First we meet with Beloit native turned international celebrity and and michelin awarded chef, Michael White. Chef White tours us through his restaurant Morini. Next we vista a New York staple and go to for the best cheese in the world, Murray's Cheese. There we get some insight into where Wisconsin ranks amongst some of these fine cheeses. Last but not least we hang out with Milwaukee native Julia Jaksic, chef at Employees Only. Chef Julia creates midwestern inspired dishes to accompany their award winning cocktails.

In this episode of Wisconsin Foodie we travel outside the borders of the dairy state and make our way to the big apple, NYC to celebrate the man known as James Beard. Our first stop is at the James Beard House in greenwich village. The Beard house hosts nightly "pop up style" dinners and this evening madison's Chef Tory Miller of L'Etoile is cooking side by side with his mentor Bill Telepan of Telepan restaurant in NY. Later we hit the red carpet for the annual culinary academy awards known as the James Beard Awards. Two of our own, Chef Tory Miller and Chef Justin Aprahamian are nominated for the James Beard "Best Chef Midwest" Award.

Fondy Food Market / Speed Queen Bbq
In this episode of Wisconsin Foodie we travel to Milwaukee's north side to visit with a group of individuals who are dedicated to changing the perception on a once thought of food blighted area and turning it around with Urban Agriculture. We meet with Young Kim operator of the Fondy Food Market, who is dedicated to getting the community fresh, heathy and affordable food, he is hosting an annual BBQ competition. We also meet Venice Williams who is responsible for Alice's Garden, an diverse oasis of Food in the middle of foreclosed homes and vacant land. Finally we visit a local treasure and generations old Speed Queen BBQ, which many believe is the best in Milwaukee.
